Aussie Lager and the Pride of Ringwood

Pride of Ringwood is a much maligned hop here in Australia. That’s because we find it in nearly every single beer from our large scale breweries. The notable exception is the XXXX Bitter (cloneish recipe here). What’s funny is that we don’t see Brits going “Ewwww Goldings, I’ll never use that, it’s so common!” or the Germans saying “Ewwww Hallertauer Mittelfrueh, Ich werde niemals, dass es so blich ist!”So we’ve got a bit of a snob factor going on with the humble Pride of Ringwood hop. Fully realising this, I’ve put my money where my mouth is and invested on a packet of the 2010 crop Pride of Ringwood hops in flower/cone form. It weighs in at a nice 9.5% alpha acids, and upon opening the bag, I was totally stunned by the pleasant aroma! It turns out, I was secretly not expecting much, and I’ve surprised myself immensely. The aroma ...

By: Jonathan Sauter

I find homebrew is more prevalent in Canada, probably due to the fact store bought beer costs about $12 a six pack up here. Never really saw it back home in Florida... You can find kit stores all over the place here, and in BC they actually have stores that will do the brewing for you (you get to do the bottling). Down in the States, beer and wine is so cheap it is almost not worth the cost and hassle of brewing it yourself in my opinion. That being said, I prefer making wine as it seems you get more bang for your buck and it is less time sensitive then beer. You can let wine sit on it's lees for weeks, and condition in a carboy for a year before you ever bottle it. Beer requires faster racking between fermentations and bottling is a pain as they are smaller and more numerous. It's lifespan is also way shorter and it can go bad very easily. As for consumption, I find that homebrew beer is acceptable, but not great. However, you can make some really decent wines at home that are comparable to a $50 bottle from the store... Guess that is subjective though!

Tackling the Germans: Munich Helles

Apart from the Vienna lager, I’ve not spent a lot of time making German or Austrian beer styles. ?This is set to change. ?We live endearingly close to the Concordia Club in Tempe, NSW. The Concordia is the local German club and has some good German beers on tap. ?After taking my assistant brewer, Betty the Dog, for a long walk last weekend, we popped in to Concordia for a few refreshing beverages. One Paulaner Munich Helles turned in to two, which turned in to three, and inspiration struck. ?Time to make one of these suckers. ?Considering the fermentation fridge is sitting there doing nothing as my Belgian Tripel and Cleanup IPA ferment at room temperature, it’s time to throw down some lagers. The first will be the Munich Helles, a light, refreshing but malty lager with a balanced bitterness and no hop aroma. I’ll be using the Wyeast 2308 Munich ...
